Coconut Oil
Coconut oil is the fat taken from coconut flesh. It is used for cooking, baking, and texture in packaged foods. It is rich in saturated fat, especially lauric acid. Virgin and refined forms differ in flavor and processing, but both supply fat.

Why PRūF tracks it
Coconut oil can raise LDL cholesterol compared with unsaturated oils, although study results vary, while heating stability and higher HDL do not establish heart protection and allergy or refining contaminants require separate consideration.

The main concern is how coconut oil affects blood cholesterol when it replaces other fats. Controlled feeding studies, considered together, generally find higher LDL cholesterol than with unsaturated vegetable oils, although individual trials differ. A four-week trial found no LDL difference from olive oil, while a larger twelve-week trial favored olive oil. Coconut oil also often raises HDL cholesterol, but that change does not establish protection from heart disease.
Newer reviews pooling different comparison fats report less certain LDL effects; their mixed designs and reporting problems limit confidence. The evidence does not establish a precise heart-disease risk from a serving, and long-term clinical trials remain limited. Coconut oil is not equivalent to purified medium-chain triglyceride oil used in some supplements. Short studies do not show dependable weight-loss or diabetes benefits.
It resists oxidation during laboratory heating better than many less saturated oils, but that does not demonstrate better overall health outcomes. Refining contaminants need separate quality controls. Coconut allergy is possible, particularly where residual proteins remain; the US no longer classifies coconut as a major tree-nut allergen for labeling.
